Banana Choc Chip Muffins
A tasty snack that combines the goodness of Bananas and yumminess of chocolate.
1 3/4 cups plain flour
2 1/4 tsp baking powder
1/2 tsp salt
3/4 cup brown sugar
2 large eggs
1/4 cup milk
1/2 cup butter, softened
1/2 cup greek yogurt / sour cream
2 over-ripe bananas, mashed
1 tsp vanilla extract
1 cup chocolate chips (milk, dark or whatever you like!)
Preheat oven to 180°c/355°f. Line a muffin tray with paper cases (or don't, I usually use a silicone tray and don't)
Add flour and baking powder and salt into a mixing bowl. Stir in sugar. Make a well in the centre of dry ingredients.
Into a medium bowl combine eggs, milk, butter, yogurt, vanilla and mashed banana. Mix gently to combine with dry ingredient and add chocolate chips.
Spoon the mixture evenly into the muffin tray.
Bake for 20 minutes or until golden brown on top. Use a knife or skewer to poke. If it comes out clean, then they are ready to remove from oven.
Transfer the muffins to a rack to cool or eat warm. Enjoy!
