8 slices cheddar cheese
4-8 slices ripe tomato
4 toasted burger buns
Divide the meat 4 patties and place on plate, using 2 finger gently press the center down slightly. This ensures that the burgers don't shrink to much. Sprinkle salt, pepper and garlic powder on both sides.
Heat a skillet/frypan on medium high heat add butter and sliced onions. Cook about 5 minutes stirring the onions every minute or so. Then reduce heat to medium low, add balsamic and sugar and cook about 15 minutes, stirring every couple minutes so they dont burn. They should be soft, sweet and sticky. Remove to a bowl.
Return the skillet/frypan to high heat. Add olive oil and place patties in pan. Cook without moving for 3 minutes. Flip and cook another 2 minutes and add cheese, cover and cook another 1-2 minutes until cheese is melted and cooked to your liking. You can use a thermometer to check internal temperature and continue to cook in oven if you want it well done.
Place the bottom of the buns on four plates. Top with the chipotle mayo, lettuce and tomato. Add the patty then and caramelised onions. Serve warm on its own or add fries. Enjoy!
