A really fun breakfast that not only looks amazing, but tastes great! A fun way to spruce up your brekky, as we call it in australia. Swap it up with fresh, seasonal fruit or even the frozen berries are great!

Ingredients
4 tbsp water
3 tsp gelatine
2 cups heavy whipping cream
2 cups full cream milk
¼ - ½ cup sugar
2-3 sprigs mint
favourite cut fruit or fresh mixed berries
liquid sweetener (maple,honey,stevia)

Directions
For the Panna Cotta
Place water in a small bowl and stir in gelatin and set aside until the gelatin softens, about 15 minutes.
In a large bowl, whisk all of cream and 1 cup of milk, set aside.
In a small saucepan, bring remaining milk and sugar to a low simmer.
Stir in water-gelatin mixture (it will dissolve immediately) and remove from heat. Whisk this mixture into the cream mixture.
Pour mixture into small cups or pan and chill in the fridge for at least 2 hours for small cups and up to 8 for a large pan. It’s best to do this the night before you need it for best outcome.
Bring it all together
Arrange the fresh fruit and granola around the panna cotta and serve.
Recipe Note
Macerate the berries (gently soften and create a little liquid) by squishing some berries with a little sugar (optional brandy etc) spoon over panna cotta for a delcious sauce.
