Cherry Chia Pudding
A pre-prepared breakfast or snack that is every bit delicious as it is simple! Even better it is loaded with protein, fibre and healthy fats to help you feel fuller for longer!
2 tbsp chia seeds
1 tsp psyllium husk
1-2 tsp liquid sweetener (honey, maple, stevia)
1 cup milk - dairy or nut milk will work!
1 tsp vanilla extract
1/3 cup cherries (frozen or fresh)
In a medium sized jar, combine all of your ingredients. Stir well and ensure no lumps. Refrigerate overnight until the chia has absorbed the milk and thickens.
This can be done straight away or when you are about to eat the pudding (following day).
Add cherries to a microwave safe bowl. Microwave for 45 seconds.
Using the back of a spoon, mash then up slightly to release more juice.
Pour over pudding and refrigerate or eat with thickened pudding.
