Chocolate Flourless Cake
I love this cake. Rich, decadent and completely addictive. Simple enough to make whenever you have a craving.
250gm/8.8oz almond or hazelnut flour/meal
200gm/7oz dark chocolate
100gm/ 3.5oz coconut oil
1 tsp vanilla bean paste or extract
pinch sea salt
5 large eggs
100gm / 3.5 Oz 70% dark Chocolate, roughly chopped
130gm / 4.6oz coconut milk or heavy whipping cream
Preheat oven to 160°C/320°F. Prepare a 22cm or 8" cake tin by lining with baking paper. I used a springform
In a large saucepan, add dark chocolate, vanilla, salt, sugar and oil. Mix together on medium temp until just melted.
Take off heat and briskly whisk in eggs one at a time.
Pour mixture in to prepared cake tin and place into the middle of your oven.
Bake for around 20 min. Carefully feel the centre of the cake to ensure it is set. You want the cake to only just set in the middle so that it is still moist. Let it sit for 5 min before serving warm or chill in the fridge for a fudge consistency.
Place chocolate into glass bowl with coconut milk or cream. Microwave or place over double boiler until chocolate is melted, whisking until smooth and silky. set aside to cool.
Pour ganache over cake and serve either cool or warm with some cream.
