Coconut & Raspberry Bread
A delicious, nutritious berry quick bread that is perfect for sharing!
2 cups almond flour/meal
1 cup unsweetened shredded coconut
1/2 tsp salt
1 tsp baking soda
3 tbsp butter, melted
2 tbsp liquid sweetener (honey, maple, stevia etc)
1 tsp vanilla bean paste/ extract
⅓ cup dark chocolate chips
Preheat the oven to 180°C/350°F and line a loaf tin with baking paper.
In a large mixing bowl, combine the almond meal, most of the shredded coconut (save a small handful for later), salt, baking soda, butter, syrup and vanilla.
Add the eggs and chocolate chips then mix until well combined. Gently incorporate the berries, don't squish them too much.
Spoon the mixture into the prepared loaf tin and sprinkle it with the reserved shredded coconut and some extra choc chips.
Bake for 50-55mins, or until a skewer inserted into the centre comes out clean.
Allow to cool in the tin then serve warm by itself or some butter.
