My favourite way to use leftover turkey and cranberry sauce! Creamy brie and crispy pastry just makes this so delish!
2-3 sheets puff pastry
225gm (8-oz) brie wheel
1/2 cup sliced turkey
1/2 cup cranberry sauce/jelly
1/4 cup chopped walnuts or pecans
fresh rosemary
Preheat oven to 190°C/375°F and grease a 12 hole muffin tin with cooking spray. If using a silicone lined tray do not spray.
Cut the pastry into 12 squares. Place squares into muffin tin slots.
Cut brie into small pieces and place atop of the pastry. Add slices of turkey and a spoonful of cranberry sauce. Top with some chopped nuts and one little sprig of rosemary.
Bake until the pastry is golden, about 15 minutes.
Serve warm.
