Elder Scrolls Online: Curried Kwama Scrib Risotto
Scrib may be an acquired taste, but once you taste this dish you'll be hunting them down by the bagful!

2 tbsp olive oil
2-4 garlic cloves, minced
1 tsp salt
1 onion, finely diced
¼ cup Thai red or yellow curry paste
500gm/1lb chicken thigh or breast, cut into 2cm pieces
1 1/2 cups arborio rice
3-4 cups chicken stock
1 cup coconut milk or cream
1 tbsp fish sauce
1 tbsp brown sugar/ honey.
(optional) few dabs of the Limited Edition Elder Scrolls Online 'Hot Sauce of Oblivion' (or your favourite hot sauce)
200gm / 7oz broccoli or green beans, trimmed, chopped.

Place coconut milk/cream into a small saucepan and combine with chicken stock. Keep warm on low heat until needed.
Heat the olive oil in a large wide saucepan over medium heat. Add the onion and garlic then cook, stirring frequently, until translucent.
Reduce the heat slightly and add the curry paste, stirring regularly. Frying will allow the spices to toast gently and become fragrant for 2-3 minutes.
Increase the heat and add the chicken and rice to the pan. You want to gently toast the rice and brown the chicken but ensure not to cook through.
Lower heat to medium low. While stirring, Add ½ cup of the warm stock/coconut milk mix and stir to combine. Cook, stirring frequently, until the liquid is fully absorbed.
Continue to add more of the stock, ½ cup at a time, stirring continuously, until the liquid is fully absorbed, for 15-20 minutes. Depending on how fast the rice cooks, there may be leftover stock. The consistency should be like oatmeal/porridge. If it is too thick, you can use more stock or coconut milk.
Stir in brown sugar/honey, fish sauce and hot sauce (if using). Season with salt and black pepper to taste.
Spoon into bowl, serve with coriander and chopped chillies. Squeeze over lime juice and enjoy while hot!
