500-750gm /1- 1½ lbs protein of choice, such as:
- chicken breast, sliced into strips
- white fish (snapper, whiting, cod, etc), sliced into strips
- prawns, uncooked and peeled
- rump steak, sliced into strips
2-3 capsicum/bell peppers (assorted colours - red/yellow/green), sliced into strips
1 brown/yellow onion, sliced
3 tbsp olive oil
2 tsp salt
2 tsp brown sugar
1½ tsp paprika
1½ tsp cumin
1½ tsp oregano
1+ tsp chilli pepper flakes (to taste)
1 tsp ground black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
½ tsp ground coriander
8-12 flour tortillas, warmed
fresh lime or lemon juice
In a large bowl, combine protein of choice, capsicums, onion, seasoning and olive oil. Cover and refrigerate for 30 minutes.
Heat a large cast-iron or nonstick frypan over medium heat. Add chicken and vegetables to create a single layer across the bottom of the pan. You may need to cook in batches. Toss every few minutes to cook evenly.
Once vegetables are tender and the chicken is opaque and browned, remove and keep warm. Continue with the other batches until everything is cooked.
Warm tortillas using method of choice (microwave/stove/flamethrower).
Pile vegetables onto a tortilla. Top with chicken, drizzle with sour cream, guacamole and chosen toppings. Squeeze over the lime juice.
You can also cook this in oven:
Preheat oven to 180°C/350°F. Line a tray with baking paper or a silicone mat. Add chicken and vegetables across pan in a single layer. Use two trays if needed.
Bake for about 20 minutes, or until chicken is cooked through and vegetables softened.
