Fudgy chocolate muffins that are better for you than you think!

Ingredients
150gm wholemeal/wheat flour
1/3 cup cocoa powder (unsweetened)
3/4 tsp baking soda
pinch salt
1 tsp espresso coffee powder
1/2 cup dark/ semi sweet choc chips
1/2 cup greek yogurt
1/2 cup honey/ agave/ rice malt syrup
1/3 milk (oat ,almond, dairy)
2 large eggs
1/4 cup canola oil/ butter, melted
1 tsp vanilla extract
Directions
Preheat oven to 180°c / 350°f. Prepare muffin tray and set aside. Note: I prefer silicone trays as you don't need to line or spray.
In a large bowl, mix together the flour, cocoa powder, baking soda, coffee powder, salt and choc chips.
In a smaller bowl whisk together the eggs, yogurt, honey, milk, oil and vanilla.
Combine the wet and dry ingredients to create a smooth batter. With a scoop or spoon, divide the batter evenly amongst the 12 muffin tray holes. Sprinkle with extra chocolate chips
Bake for 15-20 minutes, or until a toothpick comes out clean. Let the muffins cool in the pan for 5 minutes, then gently remove and place them on a rack to finish cooling. Enjoy
