Lemon Coconut Energy Balls
A low sugar, healthy snack that are super easy to make!
1½ cups whole cashews
¼ cup almond meal/flour
3 medjool dates (seed removed)
¼ cup unsweetened shredded coconut
¼ cup fresh lemon juice
2 tbsp liquid sweetener
2 tbsp coconut oil
1 tbsp vanilla protein powder
Place the cashews in a food processor and process until a fine crumb.
Add the rest of the ingredients and process until it comes together in a ball.
Roll the mixture into balls and place them on a plate or tray.
Place the tray in the freezer for about 20 minutes to firm. Enjoy!
Best stored in the refrigerator in an airtight container.
