450gm / 16 oz regular oreos or chocolate cookies
250gm/ 8oz cream cheese
340gm/ 12oz candy melts
a few drops vegetable oil
20 large candy eyes
Using a in a food processor or blender, blend the the whole (Including cream centre) cookies until it is in crumbs.
Add the cream cheese and blend together with cookies until well combined.
Take 1-1.5 tbsps. size amounts of the mixture and roll into balls. Place on a dish, cover tightly then refrigerate for an hour.
Once the balls are chilled, melt the candy melts according to package directions. Use a teaspoon (or a few) of vegetable oil to get the chocolate thin enough to dip in.
Use a toothpick, skewer or fork to pick up a truffle. Gently dip into the melted chocolate, evenly coating the ball. Tap the utensil holding the ball to remove excess chocolate.
Slide the ball Gently onto baking paper and immediately press and hold an edible eye into the center. Cover in purple sprinkles on the top
Allow to set
Eat in 2-3 days or freeze for up to 1 month.
