Sticky Pomegranate Chicken

One Tray wonder of mouth-wateringly sticky glazed chicken and caramelised onions.
1 tbsp olive oil
4 garlic cloves, minced
1 tbsp ginger, grated
1/2 cup soy sauce
1 tsp salt & pepper
1 1/2 tbsp honey
1/2 lemon juiced & zested
1/3 cup pomegranate molasses
1/2 tsp corn flour
4 red onions, quartered
8-12 chicken thighs or maryland (skin on)
10 prunes, pitted and halved
6 royal blue/all round potatoes, halved
steamed broccolini/ greens
Preheat oven to 180°c/350°f. Prepare a large roasting tray/casserole dish and set aside.
In a large bowl, combine all marinade ingredients. Stir well.
Place the chicken, potatoes, onions and prunes. Toss and ensure well covered.
Place into casserole dish and cover with lid or tent with aluminium foil. Roast for 1 1/2 hours. Stir every 20-40 minutes to ensure the glaze bastes the chicken.
Uncover and bake for 20 minutes or until lightly golden and chicken is cooked through.
Serve hot with rice and greens.
