Ingredients
Chipotle Chicken
- 1 chicken breast sliced
- 2 tbsp chipotle in adobo chopped
- ¼ tsp salt
- ¼ tsp ground black pepper
- ¼ tsp paprika
- ¼ tsp ground cumin
- ¼ tsp garlic powder
- ¼ tsp chilli flakes
- 2 tbsp olive oil
Jalapeno Ranch
- 4-5 tbsp mayo I use japanese kewpie
- 4-5 tbsp sour cream strained if necessary to make thicker
- 6 slices pickled jalapeno
- 2 tbsp fresh coriander/cilantro
- 1 tbsp lime juice
- ¼ tsp dill fresh or dry
- ¼ tsp garlic powder
- pinch tsp salt
- ¼ tsp ground black pepper
Avo Melt
- 4 slices bread of choice such as sourdough or whole whea
- ½ ripe avocado sliced
- 8 slices cheddar cheese
- ¼ red onion sliced
- olive oil to brush bread
Instructions
Jalapeno Ranch
- In a blender or food processor, prepare the Jalapeno Ranch by combining the mayonnaise, sour cream, jalapeno slices, fresh coriander/cilantro, lime juice, garlic powder, dill, salt, and pepper. Blend well until smooth and creamy. See the tip above if you don't have a blender.
Chipotle Chicken
- In a small bowl, combine the chicken along with the other chipotle marinade ingredients. Mix well.
- Heat olive oil in a medium frying pan over medium heat. Add the chicken and marinade to the pan and cook for about 4-5 minutes per side or until opaque and cooked through. Remove from the pan with pan juices and allow to rest for a few minutes. Chop chicken into chunks or shred if desired.
Bring it all together
- Take the slices of bread and place them on a plate or work surface. If you'd like to butter or oil the underside of the bread, do that now. This will help with adding crunch.
- Layer two slices with 1-2 slices of cheese, then divide the chicken evenly over the cheese bread. Top the chicken with avocado slices, red onion, a drizzle of jalapeno ranch then another layer of cheddar cheese. Place the remaining bread slices on top.
- Carefully transfer sandwiches to a preheated sandwich press. Toast the sandwiches for about 4-5 minutes, or until the bread turns golden brown and crispy, and the cheese is melted.Alternatively, use a griddle or a pan on medium heat. Cook for approximately 2-3 minutes on each side. Flip the sandwich when the cheese starts to melt and continue cooking until both sides are golden and crispy.
