Ingredients
 

  • 125 ml (½ cup) pineapple juice
  • 60 ml (¼ cup) elderflower syrup
  • mint leaves
  • 1 tsp lemon or lime juice
  • ½ tsp vanilla extract or vanilla bean paste Optional:
  • Soda water sprite, or sparkling wine (non-alcoholic)

Garnish

  • mint sprig
  • a slice of pineapple

Instructions

  • In a cocktail shaker, combine the pineapple juice and elderflower syrup.
  • Add in the mint leaves and muddle them gently to release their flavour.
  • Add the lemon or lime juice and vanilla extract if using.
  • Fill the shaker with ice cubes and shake well until the mixture is chilled.
  • Strain the mixture into a serving glass filled with ice.
  • Top up the glass with soda water, sprite, or sparkling wine, according to your preference.
